If you are an Indian food lover, then Lassi needs no introduction. You may have spotted Lassi on the menu of almost every Indian restaurant world over. This authentic Indian yogurt tumbler, with its sweet and refreshing taste, plays the perfect partner with savory Indian food.

Also Lassi’s fruity version, Mango Lassi is quite popular on the smoothie circuit these days. By the way, this may be a lesser realized fact that much before the smoothie revolution began, Lassi has been swirling in the Indian kitchens as a good old summer staple. Being an Indian food lover, true to my origin, I lust over a glass of Lassi just anytime. By the way, as Lassi is a well-known drink, I have come several fusion attempts of Lassi like Strawberry Lassi, Pistachio Lassi, Guava Lassi and even a Chocolate Lassi (yes I was aghast)

Well, everyone is entitled to have their culinary liberty, nevertheless I have to be honest as a consumer. Barring the Mango Lassi, I have hardly come across a combination that fused a new flavor into the traditional Lassi and does justice to its character. Well, as I am being critical of others, I must lift this liquid challenge.

So here comes my attempt with Peach and Saffron Lassi. For this liquescent experiment I wanted to choose a fruit that does not override the palate appeal of Lassi. Hence, I chose the Peach fruit, as it rightly enhances the sweet & sour flavor balance of a Lassi, just with an added peachy note. So with peach I hopefully got the base right, but I am definitely looking to create a statement Lassi here, therefore I infused some saffron and nutmeg that bring in the authentic Indian touch and of course the multiple health benefits. Lastly, some almond powder for a creamier texture and this Lassi is a winning blend.

Peach-lassi-cious Yum
Peach and Saffron Lassi

Ingredients
  • 3 Peaches peeled, seed removed and chopped
  • 250 grams Yogurt normal or greek
  • 2-3 table spoon Sugar honey or agave if you prefer to go healthy
  • 12-15 strands Saffron more if you prefer a stronger flavor
  • 4 table spoon milk
  • 2 table spoon Almond powder
  • 1/4 tea spoon Nutmeg powder
  • 2 Almonds fine chopped
  • 100 ml water more or less depending on the thickness you prefer

Peach and Saffron Lassi
Instructions
  1. In a small bowl, take warm milk, add some saffron strands and soak for a couple of hours. If you are soaking for more than 1-2 hours then keep the bowl in fridge.
  2. In a smoothie blender, add peach, yogurt, sugar (or substitute), almond powder and nutmeg. Fine blend these ingredients. Now, add the saffron soaked milk and blend again.
  3. At this point you can check the consistency of the drink. Normally, Lassi is a smoothie like thick drink, however if you prefer to have it thinner, you can add little water. You can also add some ice if you prefer the Lassi really child.
  4. Finally, blend the drink for another 30-40 seconds to get a bubbly layer on the top.
  5. Pour this in your smoothie glass and sprinkle some chopped almonds on top. Your Peach and Saffron Lassi is ready to chill you down till your belly!
